Butter plus cream is home to all thing dairy from the obvious to the subtle and experimental using everything from the basic equipment to the hi-tech cream chargers for subtle and experimental gastro-foams.
Butter plus cream is certainly not a website for the lactose intolerant – indeed if you don’t love whipped cream then you really have no place here – so go away!
So it all starts with a cow … and before that is all in the grass, once you get the right grass and the right cow then the whipped cream chargers are no more than the icing upon the cake! I don’t know if you have ever tried eating grass? but I can tell you from experience that it is a far from pleasant experience!
The cow might be the most ungainly creature I the world – they are less agile than an elephant with its legs tied together. But what they do have is the ability to use four stomachs to transform grass and clover into the amazingly useful and tasty milk and cream – which I turn, can give us whipped, ice cream and butter. Yes, all mammal can make butter plus cream but only a cow can do it I such prodigious quantities.
This website is all about what to do with the cream once you have it – how to get the most form it. The whipped cream recipes are all tried and tested – but don’t expect to like all of them because I can be a bit playful and experimental when I get going!
I’m lucky that I have my own cow and also all of the tech equipment form food processors, butter and makers to the cream chargers and dispensers – so unless you are lucky enough to have all of that then you’ll be playing catch up from the get-go.
