Take a bowl of any size and put in some water and the gelatin. Stir it for about two minutes or until the gelatin dissolves fully in the water. Put the maple syrup in the gelatin. Use the microwave to heat this mixture for about a minute at high heat. Take the mixture out of the microwave and add the raspberries to it. Put it aside for later.
Take a bowl and put the vanilla ice-cream in it. Beat the ice-cream with the mixer at medium speed for about a minute. Then put in the mixture with the raspberries slowly and continue beating. When the mixture is ready, put it into small bowls and put them in the fridge for half an hour to cool.
Before you serve the dessert, use the fresh raspberries you have set aside for garnish and add some fresh mint leaves too. You can also serve some cookies along with the mousse with raspberries and ice-cream.
